Ingredients:
- 2 tbsp Extra Virgin Olive Oil (cold pressed)
- 3 tbsp Valcom Green Curry Paste
- 1 lge Onion, sliced
- 500g Round Beef (or other cut) sliced thinly
- 2 cloves Garlic, crushed or chopped
- 250g Fresh or Frozen Mixed Vegetables
- 1 can (270mL) Ayam Coconut Cream
- Salt to taste
- Basil leaves for Garnish
Instructions:
- Heat oil in wok or saucepan over medium heat
- Add onions and garlic and cook lightly
- Add beef and cook till brown
- Add curry paste and mix through
- Cook for 2-3 minutes
- Add vegetables and cook for about 2 minutes
- Add coconut cream
- Bring to a simmer for another 5 minutes
- Top with basil leaves
- Serve with a bowl of steamed rice
- Serves 4
